Head Sommelier Guillaume Limoux
Guillaume Limoux a native of France is like many of his fellow countrymen passionate about food and wine… there is an old saying in France, ”La vie est trop courte pour boire du mauvais vin” – literally ”Life is too short to drink bad wine” – there is no doubt that Guillaume wholeheartedly agrees with this sentiment.
How did he get involved with wine? He dipped his toes tentatively into the world of wine at the tender age of 17 in Brittany. Before embarked on his Sommelier career at La Bastide Saint-Antoine, Provence, in 2015, initially as an intern, before being offered the role of Junior Sommelier, under the watchful eye of Chef Patron, Jacques Chibois, who taught him a huge amount.
Limoux then completed a tenure at Caviste Les Couleurs du Vignoble in early 2016, after which he felt it was time to explore a new culture and pursue other opportunities outside France.
March 2016 saw Guillaume heading up to the newly opened Forest Side, Grasmere, in the heart of the English Lake District, as Assistant Head Sommelier, prior to the restaurant winning a Michelin star in October that year.
By early 2018, an opportunity arose for Guillaume to become Head Sommelier at Forest Side, a role which he has firmly grasped with both hands and made his own.
As it stands the list features a good cross section of wines, with many created in the natural style, but don’t worry it also features an array of ‘classics’ for those who really know what they like… But watch this space, as this wine list is about to get very interesting…
